Chocolate Peanut Butter No Bake Cookies

Once you realize how easy it is to make these chocolate peanut butter no bake cookies, you will want to make them every day! 

If you spend just five seconds on this website, you would realize that around here, cookies are king. There’s a ton of variation on just the classic chocolate chip cookie alone! No bake cookies are pretty incredible because it just means you get to eat cookies sooner rather than later.

And you can make them every day. Cookies every day sounds like an amazing idea, right?

Bonus points if it isn’t completely unhealthy for you.

This cookbook happens to be one of my favorite cookbooks to-date. I love the fun and delicious recipes which seem to be made for people like me. As in people who want to eat mostly healthy without major restrictions, but are also low-key kind of lazy.

That is this book.

Everything is easy and basically all the ingredients are accessible if you are within range of a decently stocked grocery store. There’s enough recipes for all types of diets. And there’s dessert. Hallelujah, there is dessert. Dessert with butter. And sugar. Because this lady understands that if you’re eating pretty healthy the whole day, some real dessert is okay every now and then.

Even better is that most of the desserts are cookies. COOKIES! It’s like this book was made for you and me, right?

Of course… I decided to go for these chocolate peanut butter no bake cookies. Because it’s summer and no one wants to turn on the oven right now. Believe you me, there will be more cookies from this book come fall. I can’t wait to make them all.

It’s just a handful of ingredients to make chocolate peanut butter no bake cookies. The original recipe makes just one cookie. It’s handy, but the lazy girl in me wants to make a bunch at once while I have all the ingredients out so I can reach into the freezer and grab one at the end of the day. So, the recipe you will see below will have the measurements for both.

These cookies are very peanut buttery and surprisingly filling. I recommend having one with a glass of milk. If it’s too peanut buttery, you can cut down on the peanut butter a little bit. I find this is especially true if you are making a bulk amount of the recipe. And don’t skip the salt on the chocolate. It really adds to the overall flavor so much. I recommend fleur de sel or Maldon salt.

You can substitute other types of butters in the recipe too. Cashew and almond butter work really well here. I made mine with a combination of peanut butter and cashew butter.

The recipe also calls for instant oats. I don’t usually keep any in my pantry. What I did instead was blend old fashioned oats until they were significantly cut down, but not exactly to the point of being oat flour.
