I never really had any grand visions and plans for my daughter when she was little. That’s unusual, I suppose. Instead I had guidelines and general ideas of what I wanted for my daughter. One of them was for her to eat a wide variety of food and actually want to eat healthily and nutritiously. Luckily, that is exactly how she likes to eat. She will try anything if you tell her it will make her strong and healthy. She loves eating vegetables and even more surprisingly, can’t get enough milk.

I’ve never been a big milk drinker in my life, but my daughter is obsessed. She asks for milk whenever possible and drinks it at nearly every meal. It makes me so proud of her because of how nutrient-packed milk is (with 9 essential nutrients, including 8 grams of high-quality protein per 8 ounce serving) meaning I can be sure her diet is well-balanced.

During the summer, we try to find more creative ways for her to enjoy her milk while still being cool. Our favorite way is to make these cookies and milk popsicles. They are creamy and refreshing with chunks of cookie. It’s amazing and I admit to sneaking quite a few of these on my own. Really, the base is almost like ice cream, only much more nutritious with the lower fat milk and using maple syrup instead of granulated sugar.

What I didn’t realize about milk is that so many children don’t have regular access to milk during the summer months. In fact, that number is roughly 22 million when they lose their free/reduced school meals that provide them milk. And food banks aren’t able to help much either due to their limited supply that leaves them with the ability to only provide less than a gallon of milk per person per year.
