Brown Butter Chai Sugar Cookies

Cozy up with a few brown butter chai sugar cookies. These cookies are crisp on the outside and chewy on the inside; the perfect way to keep warm on a cool fall evening.

I went on a trip with a few other bloggers to learn about the dairy industry. We all decided to take a bus and drive up together so we could chat and swap ideas and just hang out. We brought food, and of course I brought these brown butter chai sugar cookies. At one point someone asked if we could only ever eat one cookie for the rest of our lives, what would it be? I love cookies. I mean, just look at my name. It was an impossible decision to make and felt like I was being asked to pick my favorite child. So, I finally answered with “anything with brown butter.” Yes, it’s a total cop out answer, but it was the best I could do.

It’s rare I’ll meet a cookie that I completely hate. Usually, I can find at least one quality in a cookie that I like. But any cookie made with brown butter is immediately doing better than the rest in my eyes. Brown butter adds nuttiness and depth, and in some instances, brings out a slight butterscotch flavor when paired with certain ingredients. In these brown butter chai sugar cookies, they tie together the warmth of the chai spices that makes you want to cozy up with a small stack and a steaming mug of tea. It’s the kind of cookie that makes you long for a drizzly day when you have nothing to do but relax with a good book. I know that rarely ever happens with real life always getting in the way, but these cookies are worth carving out time to do it.

Even if relaxing with a good book (don’t judge me, but I’ve been really into cozy mysteries as my guilty pleasure lately) and tea isn’t your thing, these brown butter chai sugar cookies are still amazing to much whenever, where ever. And yeah, they are perfect for including in your holiday cookie trays.
