Fruit & Granola Breakfast Popsicles

I hate to say it, but summer is one of my least favorite seasons. I simply cannot handle the heat. At least with winter, you can always put more layers on, and you eat lots of comforting food and cozy up in chunky sweaters. In the summer, you can only take off so many clothes and somehow the house feels hotter inside than it does outside, if that’s even possible. We are trying to delay when we use the A/C, so I have a fan on my window which really cools down the room at night, but in the morning, it just blows in the hot air from the outside and I wake up sweaty and miserable. By the time I make it downstairs, I barely want to deal with breakfast. Even cereal with milk feels too warm for me. I need something that will really cool me down.

That’s where these breakfast popsicles come in. These are a surefire way to cool you down during a hot summer morning, and only have five ingredients. Plus, you can make them one night and have something to last you all week. Well, almost. If you are like me, you might have two of these for breakfast, but that’s just because they are so tasty.

To keep things light – another requirement for my summer breakfasts  – I used Blue Diamond Almond Milk with a Hint of Honey. I love the combination of almond and honey in these pops and almond milk is a much lighter alternative to cow’s milk. I also used plain nonfat Greek yogurt to help thicken the mixture a bit, a bit of honey to amplify the honey from the milk, and whatever fruits and granola I have handy. (I recommend using frozen fruit).
